Lemon Drizzle Cake Recipe

If you love lemon drizzle cake, you’ll want to try this recipe. It’s easy to make, and tastes delicious. What’s not to love?

Ingredients:

For the cake:

  • 175g self-raising flour

  • 175g caster sugar

  • 175g butter

  • 3 James Potter Eggs

  • 3/4 teaspoon bicarbonate of soda

  • Zest of 2 lemons

For the drizzle:

  • 80g caster sugar

  • Juice of 2 lemons

Method:

  1. Preheat the oven to 180 degrees Celcius.

  2. Add the butter, sugar and self-raising flour to a mixing bowl and mix well.

  3. Add three James Potter Eggs and mix until light and fluffy.

  4. Now add 3/4 teaspoon of bicarbonate of soad, and the zest of 2 lemons to the mixture, and mix.

  5. Put the cake into a lined loaf tin and bake for 40 minutes.

  6. Whilst the cake is baking, make your drizzle by mixing 80g caster sugar and the juice of two lemons to a bowl, and microwave until clear.

  7. Take your cake out of the oven and leave on a wire rack to cool.

  8. Once cool, prick the top of the cake with a fork, and slowly pour the drizzle over the top of the cake.
