Victoria Sponge Cake Recipe

This Afternoon Tea Week, we got our niece Lizzie, to share her Victoria Sponge Cake recipe with us!

This recipe is really simple, yet delicious, and is sure to please any guests you may invite over for Afternoon Tea.

Ingredients:

For this recipe, you will need:

  • 300g caster sugar

  • 300g unsalted butter

  • 6 James Potter Eggs

  • 300g plain flour

  • 4tsp of baking powder

  • Vanilla Extract

  • 2 pots of double cream

  • Strawberry Jam

  • Strawberries and Blueberries

Method:

  1. Pre-heat the oven to 150 degrees Celcius.

  2. Mix the sugar and butter (leave the butter at room temperature before using so that it is soft) until light and fluffy.

  3. Add 2 eggs at a time and mix well.

  4. Sieve 300g plain flour into the mixture, and fold it in gently. We do this 150g (roughly) at a time.

  5. Add 4tsp of baking powder and mix in.

  6. Add a drizzle of vanilla extract.

  7. Whisk the mixture until smooth.

  8. Add to two lined cake tins, and bake for 30 minutes at 150 degrees Celcius.

  9. Once baked, the cake should be golden brown.

  10. Whisk the double cream until you get whipped cream.

  11. Put the cream and jam between the two sponges, and decorate the top of the cake using cream, strawberries, and blueberries as you wish.
