Meatloaf Recipe

We don't know about you, but at this time of year, we crave comfort food…

This meatloaf is just that, and it is perfect for lunch!

Ingredients:

  • 3 eggs

  • 450g minced beef

  • 450g pork sausage-meat

  • 1 teaspoon Worcestershire sauce

  • 1 slice wholemeal bread, made into breadcrumbs

  • 500g thin-cut rindless streaky bacon

Method:

  1. Preheat the oven to 200℃/180°C Fan. Bring a pan of water to a boil and then boil the eggs for 7 minutes. Refresh them in cold water.

  2. Put the beef mince, sausage meat, worcestershire sauce and breadcrumbs into a bowl and work everything together with your hands.

  3. Divide the mixture into 2, and in the tin make the bottom half of the meatloaf by patting half the mince mixture into a flat oval shape approximately 23cm/9in long (long enough to place the boiled eggs in a row down the middle of the meatloaf).

  4. Shape the remaining meat over the top of the eggs and pat into a loaf shape.

  5. Cover the meatloaf with rashers of bacon, tucking the bacon ends underneath the meatloaf as best you can to avoid its curling up as it cooks.

  6. Bake for 1 hour, till the juices run clear. Once the meatloaf is out of the oven let it rest for 15 minutes before slicing.
